Bacon Wrapped scallops with peach butter

Ingredients

  • 1/2 cup peach preserves
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons unsalted butter cut into small cubes
  • 16 large sea scallops ( 1/4 to 1 12 ounds) tough muscle removed
  • kosher salt and black pepper
  • 8 slices good quality bacon cut in half widhwise
  • olive oil for drizzling

Preparation

Step 1

puree the peach preserves in blender. Transfer to a small sacuepan, add vinegar and bring to a simmer. Stir in butter cubes one or two at a time until well blended (do not boil or the butter will break) remove from heat.

2. Season scallops with salt and pepper. Wrap a piece of bacon around each scallp and secure ends with toothpick.

3. Preheat broiler. Drizzle scallps with olive iol and cok about 6 inches from heat source. Flip scallops once, cooking until the bacon is crisp about 10 minutes. Drizzle peach butter over scallops and serve.
