Kale and Sausage Stew

Ingredients

  • 1 ib sweet italian sausgae, casing removed and broken into pieces
  • 1 large onion , chopped
  • 1 28 oz can diced tomatoes
  • 2 T tomato paste
  • 2 cloves garlic, chopped
  • salt and pepper
  • 1 small bunch kale, stems removed and chopped
  • 1/2 c milk
  • 1/2 c EVOO
  • 2 large russet potatoes

Preparation

Step 1

Combine sausage thru seasoning with 1 c water in a crock pot. Nestle in taters in the liquid and top wih kale.

Cook covered for 7 -8 hours on low. Transfer potatoes to mixing bowl add milk, oil, and mash.

Serve stew with mashed potatoes on top.
