Ingredients
- 4 lbs. yukon gold potatoes unpeeled
- 2 lbs. russet potatoes peeled
- 1/2 cup garlic cloves peeled
- 2 tsp. salt
- 1 1/2 cups heavy cream
- 2 sticks butter
- salt and pepper to taste
Preparation
Step 1
cut potatoes into 2-3 in. chunks
place potatoes and garlic in saucepan, add 2 tsp. salt and enough water to cover potatoes
bring to boil, lower heat and simmer about 40 min.
drain and let dry a few seconds
heat cream and butter until scalded
place potatoes and garlic in bowl
whip or mash gradually adding hot cream mix
season with salt and pepper to taste
