Ingredients
- 2 kg. leg of lamb
- 1 t. rosemary
- 1 t. salt
- 1 clove garlic
- 1 T. flour
- 1/4 t. pepper
- 4 potatoes
- 1/2 butternut pumpkin
Preparation
Step 1
Preheat oven to 400º. Combine rosemary, salt, garlic, flour and pepper. Rub into leg of lamb. If leg is lean dot with dripping. Place lamb on rack in roasting tin and bake for 30 minutes. Peel potatoes and pumpkin, cut into pieces and place around leg. If necessary add a little dripping. Reduce heat to 350º and cook for 1¼ – 1½ hours, turning veggies occasionally; sprinkle with salt. Bake veggies a little further, 10 – 15 minutes, if not crisp.
