Two Cheese Mashed Potatoes

Ingredients

  • 2 lbs. russet potatoes, peeled, cut into large pieces
  • 2/3 cup whipping cream
  • 1/4 cup unsalted butter
  • 10 oz. white cheddar cheese grated
  • 2 oz. Gruyere cheese grated

Preparation

Step 1

boil potatoes in salted water about 15 min, till tender
drain, return to pot, mash
bring cream and butter to simmer
add to mashed potatoes, whisk until well blended
add both cheeses and stir till smooth
season to taste with salt and pepper
