Chicken Stuffed Baked Potatoes

Ingredients

  • 4 potatoes
  • 1 jar (16 oz) Cheesy Alfredo pasta sauce
  • 2 cups sliced cooked chicken
  • 1 pkg (10 oz) frozen broccoli florets, thawed, drained
  • 1/4 tsp ground nutmeg
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

1. Microwave potatoes until tender. Cool 5 mins.
2. In large skillet, combine sauce, chicken, broccoli, and nutmeg.
3. Over medium- high heat, cook stirring occasionally, until hot, 7 mins. Split potatoes lengthwise.
4. Place potatoes in baking dish. Evenly divide chicken mixture, then cheese, among potatoes. Microwave on high in 1 min until cheese is melted. If desired, garnish with tomatoes.
