Ingredients
- 1/3 cup buttermilk baking mix
- 1/4 cup grated Parmesan cheese
- 1/8 teaspoon each salt and pepper
- 2 large eggs, lightly beaten
- 2 cups coarsely grated zucchini (about 2 medium-sized zucchini)
- 2 tablespoons butter or margarine
Preparation
Step 1
Mix the baking mix, Parmesan cheese, salt and pepper in a bowl. Stir in eggs until mixture just becomes moist. Fold in zucchini. Melt butter in a 10-inch skillet over moderate heat. Using 2 tablespoons batter for each, fry about 4 pancakes at a time, 2 to 3 minutes on each side or until brown. Keep cooked pancakes warm while frying the rest.
