German Apple Cake

Ingredients

  • Cake:
  • 2 eggs - beaten
  • 2 c. sifted flour
  • 2 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 c. canola oil
  • 1 tsp. vanilla
  • 2 c. sugar
  • 1 c. walnut meats
  • 4 c. apples, thinly sliced
  • Frosting:
  • 1/2 c butter
  • 1 c brown sugar, packed
  • 1/4 c evaporated milk
  • 1/2 tsp vanilla

Preparation

Step 1

Cake:
Pre-heat oven to 350.

Mix all ingredients for cake together with a spoon – do not use mixer. Batter will be very stiff. Spread in greased 9x13 dish. Bake at 350 45-50 minutes.

Frosting:
Boil all ingredients in a small saucepan for 2 minutes. Set pan in bowl filled with ice water. Beat icing until of spreading consistency. Spread over top of cake.
