Baked Clams

10 C, 7 or 8 shells equal 1 C

Ingredients

  • 12 cans minced clams
  • 1 1/2 C olive oil
  • 3 or more C bread crumbs
  • 4 T dried parsley
  • 24 cloves chopped garlic
  • 1 1/2 t salt
  • 2 1/2 C diced onion
  • 2 T oregano

Preparation

Step 1

Saute onions in olive oil, add garlic, sauté, add parsley, oregano and 3 C bread crumbs. Brown mix slightly. Add 6 cans of clams in blender, chop quickly; add other 6 cans including juice of these 6 cans. Add browned bread crumb mixture. Mix well. Spoon into shells, sprinkle lightly w/ bread crumbs, paprika and parm cheese.

Bake 370 for 25-30 mins (or until crusty on top)

*Mixture can be frozen prior to cooking. If mixture is too wet, add more crumbs
