Slow Cooker Stuffing

This is a great and easy stuffing recipe that uses one skillet and your slow cooker. No need to have extra pots and pans on the stove top or in your oven - put it in your slow cooker several hours before serving, and you'll have perfect stuffing!

Ingredients
- 1 cup butter
- 2 cups chopped onion
- 2 cups celery, chopped
- 1/4 cup fresh parsley, chopped
- 12 ounces mushrooms, sliced
- 12 cups dry bread cubes
- 1 teaspoon poultry seasoning
- 1 1/2 teaspoon dried sage
- 1 teaspoon dried thyme
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon black pepper
- 4 1/2 cups chicken broth or vegetable broth
- 2 eggs, beaten
Preparation
Step 1
Melt butter in skillet over medium-heat. Cook onion, celery, mushroom and parsley in the butter.
In a small bowl, mix the seasonings together. Place the bread crumbs in the slow cooker. Spoon the cooked vegetables over the breadcrumbs, and then add the seasonings and mix well. Pour in enough chicken broth to just moisten the bread mixture. Mix in the beaten eggs.
Cook on HIGH for about 45 minutes, then turn to low and cook for another 4 to 8 hours.
