Fried Okra

My MeMaw's homemade fried okra recipe is now yours to enjoy too! Makes a great side dish or appetizer. Enjoy!

Ingredients
- Fresh pods of okra (pick the small young ones) Adjust recipe depending on amount of okra you have.
- 3 eggs, scrambled
- 2 cups corn meal (white or yellow) + or - depending on amount of okra
- 1/2 cup flour
- Salt and pepper, to taste
- Tony Cachere's seasoning, to taste
- Peanut oil, as needed
Preparation
Step 1
In a large bowl mix cornmeal, flour and seasonings. Set aside.
Remove heads from okra and slice into 1/2-inch pieces.
In another large bowl crack 3 eggs and scramble. Add okra to eggs and let sit for about 10 mins. Make sure all okra pieces are covered with egg.
Drain egg from okra in colander and then toss in cornmeal mixture.
Heat peanut oil to 350°F and add enough okra to cover surface. Fry until golden brown. (approximately 10 minutes). Remove okra and bring oil temp back up to 350°F. Add more okra and continue until all okra is fried to a golden brown.
