Ingredients
- 2 tbsp EVOO
- 10 baby bella mushrooms
- 4 med carrots, peeled and cut into julienne strips
- 1/4 cup dry sherry
- 1/4 tsp sea salt
- Freshly ground pepper to taste
- Chopped fresh parsley
Preparation
Step 1
1. Heat oil in large skillet over med-high heat. Add mushrooms and carrots and cook for 10 min or until carrots are crisp-tender.
2. Stir i remaining ingredients and cook for a few minutes more.
