Crab Artichoke Casserole

Ingredients

  • 8 oz. uncooked small shell pasta
  • 2 tbsp. butter
  • 6 green onions, chopped
  • 2 tbsp. flour
  • 1 c. half and half
  • 1 tsp. dry mustard
  • 1/2 tsp. ground red pepper
  • salt and pepper
  • 1/2 c. shredded Swiss, divided
  • 1 pkg. imitation crabmeat
  • 1 can artichoke hearts, drained & cut into bite-size pcs.

Preparation

Step 1

Preheat oven to 350. Grease 2 qt. casserole. Cook pasta according to package directions; drain and set aside.

Melt butter in large saucepan over med. heat. Add green onions; cook and stir about 2 mins. Add flour; cook and stir 2 mins. more. Gradually add half and half, whisking constanlty until mixture begins to thicken. Whisk in mustard and red pepper; season w/ salt and pepper. Remove from heat; stir in 1/4 c. cheese till melted.

Combine crabmeat, artichokes, pasta, and sauce mixture in prepared casserole. Top w/ remaining 1/4 c. cheese. Bake about 40 mins. or till bubbly and lightly browned.

Can be baked in individual ovenproof dishes. Reduce cooking time by 20 mins.
