Rhubarb Crunch
An easy dessert that's not too sweet. The tart flavor of the rhubarb is topped with an oat-based batter for a cobbler-like dessert. A scoop of ice cream really sweetens the deal!

Ingredients
- Filling:
- 4 C. rhubarb pieces (1/2 inch thick)
- 1 C. granulated sugar
- 2 Tbs. butter or margarine
- 2 Tbs. flour
- Topping:
- 1 C. granulated sugar
- 2 tsp. baking powder
- 1 large egg, beaten
- 1/4 C. rolled oats
- 1 C. sifted all purpose flour
- 1 tsp. salt
Preparation
Step 1
To make filling, mix ingredients and put into 8 inch square baking dish. Let stand while mixing the topping.
To make topping, mix all ingredients until crumbly. Spread over rhubarb mixture in pan. Bake at 350 degrees for 40 minutes.
Yield: 6 servings
