Lentil Barley Stew

Ingredients

  • 1/4 c. butter
  • 1 chopped onions
  • 2 chopped celery ribs
  • 6 c. chicken broth
  • 3/4 c. lentils
  • 2 cans crushed Italian tomatoes
  • 3/4 c. barley
  • 1/2 tsp salt
  • Pepper
  • 1/2 tsp rosemary
  • 1/2 tsp garlic salt
  • 1/2 c. shredded carrots

Preparation

Step 1

Sauté the onions and celery in a Dutch oven. Add the broth and lentils and cook 20 minutes. add all remaining ingredients except carrots and simmer 45 minutes. Add the carrots, cook 5 minutes and serve with a slice of whole wheat bread.
