Ingredients
- berry vinaigrette:
- 1 pkg baby spinach
- 1/2 red onion, sliced thin
- 1/2 pint strawberries, sliced
- 3 oz blue cheese, crumbled
- 1/3 cup cashews
- 1 Tbsp seedless strawberry or raspberry jam
- 1/2 Tbsp Dijon mustard
- 1/4 cup raspberry vinegar
- 6 Tbsp extra virgin olive oil
- Salt and pepper, to taste
Preparation
Step 1
Combine salad ingredients in a large bowl.
Mix together jam, mustard, vinegar, salt, and pepper in a bowl. Gradually add olive oil, whisking constantly to emulsify. Adjust seasonings to taste. Pour over salad. Refrigerate any leftovers.
