Red Cabbage Coleslaw

Ingredients

  • 1 TBSP dijon mustard
  • 2 TBSP Cider vinegar
  • 1/2 C Mayonnaise
  • 2 TBSP White sugar
  • 1/2 C flat leaf parsley (chopped)
  • 2 cloves garlic, (finely choppe) or grated
  • salt & ground black pepper
  • 1/2 larg head red cabbage, (thinly sliced)
  • 1 red bell pepper, (seeded, thinly sliced)
  • 2 stalks celery from the heart
  • 4 scallions, (thinly sliced on a bias)
  • 1 TBSP lemon juice

Preparation
In a large mixing bowl, whisk together mustard, vinegar, mayonnaise, sugar, parsley and garlic. Season the dressing with salt and black pepper. Add veggies to bowl and toss to coat.
