Baken Gnocchi with Chicken

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cup milk
  • 1 cup chicken broth
  • 1/4 tsp grated nutmeg
  • 2 cups shredded cooked chicken
  • 1 (17.5oz) package potato gnocchi
  • 1 1/2 cup loosely packed baby spinach
  • 1/4 cup grated parmesan cheese

Preparation

Step 1

Position a rack in the upper third of the oven and preheat to 425.
Melt butter in an oven proof skillet over medium high heat.
Add flour and cook, whisking, for 3 minutes.
Whisk in milk and chicken broth until smooth.
Simmer, whisking constantly until slightly thickened, 5 minutes.
Whisk in salt to taste and nutmeg.
Add the chicken, spinach, and the gnocchi to the sauce and stir until coated and spinach wilts.
Sprinkle with the parmesan and transfer to the oven and bake until bubbling (20 minutes).
Turn on broiler and broil until lightly browned on top (3 minutes).
