good for travelling as a snack, adding protein powder will make for a more satifying snack

Ingredients

  • 2 eggs beaten
  • 1/8 tsp. stevia
  • 1 tsp. vanilla
  • 1/2 cup butter melted
  • 1/2 cup whole grain flour(can use ground almonds)
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 scoops protein powder
  • 1 cup coconut
  • 1/2 cup nuts or seeds
  • 1/2 cup dried fruit

Preparation

Step 1

in a large bowl, combine eggs, stevia, butter and vanilla, set aside
in another bowl, stir together, flour, baking powder and salt, add to egg mixture. stir in coconut, nuts and fruit to coat all ingredients.
pour into 8x8 baking dish. bake 20 minutes at 350F
cut into bars when cooled
