Ingredients

- 1 lb. Small red potatoes, partially peeled
- 1 Tbs. Butter
- 1 Tbs. Snipped fresh chives
- 1 tsp. salt
Preparation
Step 1
In microwave-safe bowl, combine partially peeled small red potatoes, salt and 1cup cold water. Cover bowl with plastic wrap; fashion a vent in the plastic by cutting asmall hole in the top. Cook in microwave on high power for 20 min. Every five minutes of cooking, stop the cooking process and stir the the potatoes to evenly distribute the heat. Add butter, chives and salt to hot potatoes; toss gently to coat evenly, until butter is melted and has been absorbed by the potatoes
