Potato and Pepper Frittata (WW)

Ingredients

  • 1 T canola oil
  • 2 c frozen hash brown potatoes
  • 1 bunch scallions, thinly sliced
  • 1 red bell pepper, seeded and chopped
  • 3/4 tsp salt
  • 1/4 c chopped flat leaf parsley
  • 1 (16 oz) container fat free egg substitute
  • 1/2 c shredded reduced fat cheddar cheese
  • 1 T parmesan cheese
  • 1/4 tsp pepper

Preparation

Step 1


1.Heat oil in med. nonstick skillet over med. heat. Add potatoes, scallions, bell pepper and salt. Cook stirring frequently, until vegetables are tender and golden – 8 to 10 min.

2.While veggies are cooking, spray another skillet and set over med. heat. Add the egg sub. And cook until set, 7-8 min., lifting the edges often with a spatula to let the uncooked egg flow underneath.

3.Spoon potato mixture over the frittata; then sprinkle with the last 3 ingredients. Cover and cook until the cheeses melt, about 3 min.
