Crockpot Chicken and Cornmeal Dumplings

Ingredients
- 2 c diced chicken
- 2 c diced potatoes
- 1 can of chicken broth
- 1 12oz can of V8 (tomato juice cocktail)
- 1 tsp chili powder
- 6 drops of tabasco
- 1/3 cup of yellow cornmeal
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 tsp salt.
- 1 1/4 cup packaged biscuit mix (bisquick)
- 1 cup shredded cheddar cheese
- 2/3 cup milk
Preparation
Step 1
*place chicken, broth, tomato juice, celery, onion, potatos, hot sauce, and chili pepper in the crockpot.
*cook on low for 4 hours.
*Turn temp up to high and cook until bubbly. If you need more water at this point,, add it.
*combine biscuit mix, cornmeal, and 1/2 cup of the cheese. Add milk and stir until just moistened.
*Drop by spoonfulls into bubbly broth and cook for an additional 2 1/2 hours.
*Sprinkle the rest of the cheese over the dish and serve.
