Spinach Salad with Oranges and Garbanzo Beans (Swan and Dolphin)

An interesting and tasty salad. The dressing is very light in taste and in the amount. It very lightly coats the salad. The two teenagers cleaned their plates.

Ingredients

  • 3 Tbsp. Orange Juice
  • 2 Tsp. White Wine Vinegar
  • 2 Tsp. Honey Dijon Mustard (used to be Dijon mixed with a little honey)
  • 2 Tsp. Olive Oil
  • 6 Cups Torn Fresh Spinach
  • 1/2 Cup Sliced Red Onion
  • 1 15 Oz. Can Mandarin Oranges
  • 1 Cup Garbanzo Beans
  • 3 Tbsp. Pecans, Toasted

Preparation

Step 1

Combine orange juice, white wine vinegar, honey Dijon mustard and olive oil in a small bowl. Stir well with a whisk. Combine spinach, red onion, oranges and garbanzo beans in a large bowl. Pour dressing over spinach mixture. Toss to coat. Top with toasted pecans.
