Ingredients
- can make ahead
- 2 tbsp evoo
- 2 small, thinly sliced onions
- 3 c sliced or diced mushrooms
- 8 slices cooked chopped bacon
- 1 tsp thyme
- 1 1/2 c shredded swiss (6oz)
- 3/4 c shredded fontina ch (3oz)
- 6 c 1" bread cubes w/ crust (e.g. Fr bread)
- 8 beaten eggs
- 2 1/2 c milk
- 1 tsp kosher salt
- 1/2 tsp pep
Preparation
Step 1
cook onions in 1 tbsp oil till soft and golden, remove
do same w/ mushrooms
combine onions, mushrooms, bacon, thyme, cheeses and
bread
mix eggs, milk, s&p and add to above stirring to coat
spread evenly in 3 qt buttered baking dish
cover w/ plastic wrap and chill 4-24 hrs
bake 350 ----- 50 min ------- if top becomes too brown while baking cover w/ foil
