  • 3 tbsp butter
  • 4 lbs onions
  • salt - pep
  • 2 c water
  • 1/2 c sherry
  • 4 c chick broth
  • 2 c beef broth
  • 6 sprigs fresh thyme
  • 1 bay leaf
  • croutons
  • 2 1/2 c gruyere ch

Preparation

Step 1

carmalize onions
deglaze pan w/water several times, then w/sherry
add remaining water and broths
3-5 hrs
