- 3 tbsp butter
- 4 lbs onions
- salt - pep
- 2 c water
- 1/2 c sherry
- 4 c chick broth
- 2 c beef broth
- 6 sprigs fresh thyme
- 1 bay leaf
- croutons
- 2 1/2 c gruyere ch
Preparation
Step 1
carmalize onions
deglaze pan w/water several times, then w/sherry
add remaining water and broths
3-5 hrs
