Ingredients
- Olive oil
- 1 red onion
- 1-2 cloves garlic
- 1 yellow pepper
- 2 CUPS Bread crumbs (whole wheat), (Costco)
- 1 cup Black olives
- 1 cup white whine
- 1 1/2 cups Walnuts, (roasted 5-10min)
- 1 cup Feta crumbled cheese
- SALT AND PEPPER
- 4 cups Butternut squash
Preparation
Step 1
Sautee onions, garlic and oil, and in some of the wine. Microwave squash for 10-20 minutes on high till soft and able to mash up. Add on top of squash, walnuts, onion mixture, olives, and feta. Bake for 1 hr at 350 degrees
