Ingredients
- Makes 2.5 cups:
- 4 oz. Colavita EVOO
- 4 oz. sundried tomatoes
- 2 tbsp. fresh basil
- 2 tbsp. parsley
- 1 tbsp. chopped fresh garlic
- 2 oz. parmesan
- 2 oz. pinenuts
- 2 oz. balsamic vinegar
- 1 tbsp. tomato paste
- 3 oz. crushed tomatoes
- 2 oz. red wine
- 1 oz. diced white onion
Preparation
Step 1
Rehydrate sundried tomatoes by soaking in warm water a few minutes, until tender.
Place basil, garlic, pinenuts, parsley, onion andv sun dried tomato in processor or blender.
Puree until well incorporated.
Add all remaining ingredients, except parmesan and EVOO.
Puree again.
Stir in EVOO and parmesan.
