Grilled Fruit with Coconut Sauce

Ingredients

  • 1 can coconut milk
  • 2 tsp brown sugar
  • 2 tbsp dark rum
  • 1 tsp vanilla
  • pinch nutmeg
  • toasted nutmeg
  • 4 bananas, cut
  • 2 mangos, peeled and cut
  • 1/2 pineapple, cut
  • lime wedges

Preparation

Step 1

1. Add coconut milk and brown sugar to medium sauce pan, boil over medium-high heat.
2. Reduce heat to medium and let hard simmer, stirring occasionally, until reduced by half (15 minutes).
3. Sprinkle with nutmeg and stir in rum and vanilla.
4. Let cool to room temperature and refrigerate until chilled (2 hours).
5. Sprinkle with toasted coconut.
6. Grill fruit on medium for 3 minutes per side.
7. Serve fruit with side of sauce.
