Pork Chops Monterey

Ingredients

  • 6 pork chops
  • 1/2 cup water
  • 2 Tbs. oil
  • 1 cup rice
  • 1/2 cup chopped onion
  • 3/4 tsp. salt
  • 1/4 cup chopped green pepper
  • dash of pepper
  • 1 (16 oz) can of diced tomatoes
  • 1 1/2 cup shredded Monterey Jack cheese

Preparation

Step 1

Brown pork chops in oil. Remove; saute onion and green pepper in oil. Stir in tomatoes, water, rice, and seasonings. Add pork chops, cover, and simmer 20 minutes, stirring occasionally.

Remove pork chops and stir in 1 cup cheese into rice mixture. Top with pork and cheese.
