Cauliflower Cheese Soup

Ingredients

  • 2 c. potato chunks
  • 3 1/2 c. cauliflowerets, divided
  • 1 med. carrot, chopped
  • 3 med. cloves garlic, sliced
  • 1 large onion, chopped
  • 1/2 tsp. salt, optional
  • 4 c. water or stock
  • 1 1/2 c. cheddar cheest, grated
  • 3/4 c. low-fat milk
  • 1/4 tsp. dill weed
  • 1/4 tsp. caraway seed
  • 1/4 tsp. dry mustard
  • black pepper
  • 3/4 c. buttermilk
  • 8 tsp. chopped scallions or chives

Preparation

Step 1

Cook potatoes, 2 c. cauliflower, carrots, garlic, onion, salt, and water for 10 mins.
Turn burner off and let set 15 mins. Puree in blender until smooth and creamy. Heat gently and whisk in cheese, milk, and spices. Steam or saute remaining cauliflower (or microwave) and add to soup. Just before serving, whisk in buttermilk. Garnish with scallions.
