Ingredients
- DRESSING:
- 2 cans black-eyed peas, rinsed
- 1 large tomato, chopped
- 2 medium bell peppers, yellow or orange and green
- 1/2 red onion, chopped
- 1 celery stalk, chopped
- 1/4 cup pepper jelly
- 1/4 cup red wine vinegar or seasoned rice vinegar
- 2 tablespoon olive oil
- 1 tablespoon parsley, chopped
- Salt and pepper to taste
Preparation
Step 1
CHOP - I like the look of this salad when the veggies are all chopped about the same size of a black eyed pea (but chop the way you like!)
COMBINE all veggies in a bowl with an air tight lid.
WHISK - in a small bowl pepper jelly, red wine vinegar, olive oil, and parsley until combined.
POUR over veggies and toss.
CHILL covered in refrigerator for 8 hours or overnight to marinate the veggies. Shake it to coat whenever you think about it!
