Garlicky Spinach

Ingredients

  • 2 - 10 oz. bags fresh spinach (not baby)
  • 2 TB. toasted sesame oil
  • 2 chopped garlic cloves
  • 2 TB reduced-soy sauce
  • 1 tsp. distilled white vinegar
  • kosher salt & pepper

Preparation

Step 1

Boil spinach for 1-2 minutes in salted water. Then transfer to bowl of ice water. Squezze dry to remove excess water.

Heat sesame oil over medium heat and add garlic, cook until fragant (about 1 minute). Add Soy sauce and vinegar. stir to combine. Add spinach, salt & pepper.
