Spinach Rice Casserole

Ingredients

  • 1/3 cup chopped onion
  • 1 clove garlic, minced
  • 1 T cooking oil
  • 1 14.5 oz. can tomatoes
  • 1 tsp dried oregano or basil
  • 8 oz. tofu
  • 2 cups cooked brown rice
  • 1 10 oz. pkg frozen chopped spinach, thawed and drained
  • 1/2 cup swiss cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

Cook onion and garlic in oil until tender. Add undrained tomatoes and oregano or basil. Bring to a boil and reduce heat. Simmer about 3 minutes.

Meanwhile, blend tofu until smooth. Add to tomato mixture. Stir in cooked rice, spinach, half of swiss cheese, salt and pepper.

Spoon into greased baking dish. Bake, uncovered, in 350 degree oven for 30-40 minutes. Sprinkle with remaining cheese.
