Ingredients
- 1 lb medium scallops,
- 2 cup sliced mushrooms,
- 2 tsp olive oil,
- 3 cups chopped broccoli,
- 1 red bell pepper, sliced into thin strips,
- 1 cup low sodium chicken broth,
- 3 tbsp whole wheat flour,
- 2 tsp low sodium soy sauce,
- Pepper to taste.
Preparation
Step 1
Cut the scallops into halves. In a 3 quart saucepan, cook and stir mushrooms in olive oil over medium heat until tender for about 5 minutes. Stir in scallops, broccoli, and red pepper. Cook, stirring frequently, until scallops are white for 3 to 4 minutes.
Gradually stir chicken broth into whole wheat flour until smooth. Stir broth mixture and soy sauce into scallop mixture. Heat to boiling, stirring constantly. Reduce heat, simmer and stir 1 minute. Add pepper to taste and serve.
