Potato Cheese Casserole

Ingredients

  • Topping:
  • 6-8 potatoes, cooked and chopped in bitesize pieces
  • 1 can cr of chicken soup
  • 1 c sour cream
  • 1 c grated cheese
  • onion, finely chopped
  • 2 T melted butter
  • chives
  • salt
  • pepper
  • 2 c Cornflakes
  • 2 T melted butter

Preparation

Step 1

Place potatoes in baking dish. Mix all other ingredients except ingredients for topping. Spread mixture over potatoes. Toss Cornflakes with butter. Sprinkle topping over potatoes. Bake at 350 until bubbly, about 30-40 mins.
