White Chicken and Corn Chili

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cubed
  • 2 15 oz. cans diced tomatoes
  • 2 15 oz. cans cannellini beans, drained and rinsed
  • 1/2 c chicken broth
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 jalapeno peppers, seeds removed and minced
  • 1 14 oz. can yellow corn, drained
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp ground cayenne pepper
  • 1 tsp salt
  • 1 c shredded sharp cheddar cheese

Preparation

Step 1

Mash 1/2 c cannellini beans with fork

Place all ingredients including mashed beans into slow cooker and stir to combine.

Cover and cook on high for 3 hours

Top with cheddar cheese before serving.
