Pear, Beets, Goat Cheese and Walnut Salad

Ingredients

  • 2 T Balsamic Vinegar
  • 1 t Honey
  • 1/2 t Dijon mustard
  • 1/4 t Salt
  • 1/8 t Pepper
  • 1/4 C Canola oil
  • 4-5 pcs. Bacon, fried and crumbled
  • 15 oz. Beets, cooked, chopped and chilled
  • 13 oz. Pears, diced (or use 1 fresh pear)
  • 3 oz. Goat Cheese
  • 1/4 C Sugared walnuts
  • Salad greens

Preparation

Step 1

1.Combine vinegar honey, Dijon, salt and pepper. Whisk in oil to make dressing.

2.Mix 1 T dressing with beets. Toss remaining dressing with salad greens.

3.Divide salad greens among 6 plates. Top with bacon, pear, cheese, walnuts and last, beets
