Tortellini with Summer Vegetables

Ingredients

  • 3/4 16-ounce package fresh cheese tortellini
  • 4 tablespoons butter
  • 1 teaspoon garlic, minced
  • 3 ears fresh corn, kernels removed (or one can of corn kernels)
  • 2 zucchini, sliced
  • 2 tomatoes, chopped
  • 1/2 cup fresh basil, roughly chopped
  • Coase salt and pepper, to taste

Preparation

Step 1

1. Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions. Reserve 1/4 cup of the pasta cooking water.
2. Meanwhile, in a large skillet, melt butter over medium high heat. Add garlic, cook until fragrant, about 30 seconds. Add corn and zucchini. Cook until corn is tender, about 4 to 5 minutes.
3. Drain pasta, add to corn mixture along with tomatoes, basil and reserved pasta cooking water. Toss to combine, season to taste with salt and pepper.
