Holiday Mashed Potatoes

Ingredients

  • 3 lbs. peeled, cooked and hot potatoes
  • 1/4 c. butter
  • 8 oz. cream cheese
  • 1/2 c. sour cream
  • 1/2 c. milk
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/4 c. chopped or grated onion
  • dash of pepper

Preparation

Step 1

Beat potatoes, butter, and cream cheese until completely mixed and there are no lumps. Add sour cream and milk. Mix and then add eggs, salt, onion and pepper.

Beat well until light and fluffy. Place in greased 9" round casserole and refrigerate overnight or several hours. Bake in preheated oven at 350 degrees for 45 minutes until lightly browned on top. (Can bake at 325 degrees if with another food in oven - extend baking time 10-15 minutes.)
