Ingredients

  • 1 ) 2 cans great northern beans, rinsed and drained Edit Delete
  • 2 ) 1/2 cup onions, green, red, or Vidalia Edit Delete
  • 3 ) 2 teaspoons garlic, minced Edit Delete
  • 4 ) 1/2 cucumber, diced Edit Delete
  • 5 ) 2 Roma tomatoes, sliced diagonally Edit Delete
  • 6 ) 4 sun-dried tomato halves, slivered (optional) Edit Delete
  • 7 ) 1/4 cup fresh parsley Edit Delete
  • 8 ) 2 tablespoons lemon juice (bottled is fine) Edit Delete
  • 9 ) Spinach leaves, cut diagonally Edit Delete
  • 10 ) 1 1/2 teaspoons salt Edit Delete
  • 11 ) pepper Edit Delete
  • 12 ) 1 1/2 tablespoons Italian seasoning, dried Edit Delete
  • 13 ) 1 small can black pitted olives Edit Delete
  • 14 ) 5 tablespoons green olive oil (not extra virgin) cheapest

Preparation

Step 1

In a large bowl, combine drained beans, garlic, and onions. Add olive oil with salt, pepper, parsley, Italian seasoning and lemon juice. Toss lightly into bowl, tomatoes, spinach leaves, black olives, and cucumbers. Let sit and then adjust to your taste.
