Dutch Apple Pancakes

Ingredients

  • 2 tbs butter
  • 3 lg Granny Smith applies, peeled and thinly sliced
  • 6 tbs sugar
  • 1 tsp cinnamon
  • 3 eggs
  • 1/2 c flour
  • 1/2 c skim milk
  • 1 tbs fat-free sour cream
  • 1/4 tsp salt
  • 1 tsp grated lemon zest

Preparation

Step 1

Heat oven to 400

Melted butter in oven proof pan. Add apples, sugar and cinnamon.

Sautee and stir 3-5 minutes. Remove heat.

In bowl, beat eggs until frothy. Add flour, milk and sour cream, salt and zest.

Beat until smooth batter forms.

Pour over apples and bake about 25 minutes.
