Pie, Apple Rhubarb

Ingredients

  • Crumb Topping:
  • FOR THE FILLING
  • 3 cups diced, fresh rhubarb
  • 2 large apples, peeled and diced (I used Galas this time and I really liked it, a sweeter apple works best for this pie rather then the traditional granny smith)
  • 1/2 cup granulated sugar
  • 1 tablespoon cinnamon
  • pinch of salt
  • 1/4 cup all purpose flour
  • FOR THE CRUST
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/3 cup butter or margarine

Preparation

Step 1

Stir fruit and sugar and cinnamon well. Dump into pie plate which already has a bottom crust.
Sprinkle the crumb mixture over the top of the pie.
Cover the edge of the pie with foil to prevent over-browning.
Bake in a 400 degree oven for 20 minutes.
Remove the foil. Bake to 20 minutes more or until topping is golden.
