Ingredients
- 1 lemon (2Tbsp juice)
- 1 lime (1Tbsp juice)
- 1.5 lb scallops
- 3 tsp evoo
- 1 Tbsp chopped shallot
- 1 tsp Dijon
- 1 bag (5-6 oz) baby greens
- 1/4 c fresh chopped parsley
Preparation
Step 1
grate 1/4 tsp lemon and lime rind & combine w/1/8 tsp s&p.......sprinkle this on washed and dries scallops.........
cook 6-8 min. in oil, then remove from pan and saute shallots till tender, stir in Dijon, citrus juices while scraping brown bits in pan.....toss greens in this and place on plates, top w/ scallops and parsley.
