Ingredients

  • 1

    lemon (2Tbsp juice)

  • 1

    lime (1Tbsp juice)

  • 1.5

    lb scallops

  • 3

    tsp evoo

  • 1

    Tbsp chopped shallot

  • 1

    tsp Dijon

  • 1

    bag (5-6 oz) baby greens

  • ¼

    c fresh chopped parsley

Directions

grate 1/4 tsp lemon and lime rind & combine w/1/8 tsp s&p.......sprinkle this on washed and dries scallops......... cook 6-8 min. in oil, then remove from pan and saute shallots till tender, stir in Dijon, citrus juices while scraping brown bits in pan.....toss greens in this and place on plates, top w/ scallops and parsley.
