Apricots, figs and onions

Ingredients

  • 3 cups apricots, figs and pears
  • 12 red onions, halved
  • 1/3 cup orange juice
  • 1 Tbls. olive oil

Preparation

Step 1

Preheat oven to 325 degrees.

Using heavy duty aluminum foil pull off 36 inches and fold in half. Combine fruit, onions, orange juice and oil. Place fruit mixture in center of foil. Bring two sides of foil together and make a double fold. Double fold each end, leaving room for steam. Add foil packet to oven rack and roast for one hour.

Bake for 1 hour.
