Ingredients
- Garnish:
- 4 cups tomato sauce
- 4 cups chopped tomatoes
- 1/4 cup chicken stock
- 1/2 cup chopped onions
- 1/2 cup chopped green peppers
- 1/2 cup hot salsa
- 2-3 cloves minced garlic
- Sour cream
- Tortilla chips
- Cheddar cheese, shredded
Preparation
Step 1
Combine all ingredients in a medium size sauce pan. Bring to a boil, reduce heat and simmer for 10 minutes.
Place large tortilla chips around inside of the soup bowl, so they appear to be forming a taco shell for the soup in the middle. Garnish with sour cream, tortilla chips and shredded cheddar cheese. (Colby or Monterey Jack may be substituted.)
