Ingredients
- 3 fully ripe bananas (about 3)
- 1 C. vegetable oil
- 2 eggs
- 1 1/2 C. all-purpose flour
- 1 C. sugar
- 1 t. baking soda
- 1/2 t. salt
- 3/4 C. chopped pecans or walnuts (optional)
Preparation
Step 1
Grease a 9"x9"x2" baking pan. Preheat oven to 350 degrees.
1. Whirl bananas in container of electric blender to make 1 C. of puree. Add 1 C. vegetable oil and 2 eggs. Whirl until well blended.
2. Sift 1 1/2 C. flour, 1 C. sugar, 1 t. baking soda and 1/2 t. salt into a medium-size bowl. Pour banana mixture all at once into dry ingredients; mix just until blended. Stir in nuts, if desired.
3. Pour into prepared pan; rap on table to remove any large air bubbles. Bake for 45 minutes or until center springs back when touched. Cool before serving.
NOTE: IF USING LOW-CARB BAKE MIX INSTEAD OF FLOUR, REDUCE BAKING TIME TO 25 MINS.
