Easy Carrot Cake

Ingredients

  • FROSTING:
  • 2 jars junior carrots ( either 2 4.5oz baby jars or 3 4oz jars)
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 4 eggs
  • 1 cup plus 2 tbs oil
  • (raisens or nuts optional)
  • 1/4 cup butter
  • 1 8oz cream cheese
  • 1/2 tsp vanilla
  • 3 1/2 cups confectioners sugar

Preparation

Step 1

Preheat oven to 350. Mix all together and pour into 9 x 13 pan. Bake for about 45mins.

Let cake completely cool.

While cooling prepare frosting. Cream butter, cream cheese and vanilla. Blend in confectioner sugar. Sprinkle with nuts if desired.
