Black Bean, Corn and Avocado Salad

Ingredients

  • 1 can rinsed and drained black beans
  • 1 can mexi-corn, rinsed and drained
  • 2 avocados
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • Juice of 1 lime
  • 2 T olive oil
  • 2-3 sprigs of cilantro
  • 1/2 tsp cumin
  • Salt and Pepper to taste

Preparation

Step 1


Dice all vegetables and add to large bowl, along with cilantro.
Add lime juice, olive oil, cumin, salt and pepper, and toss to combine.
Chill until ready to serve.
