Ingredients
- 2 mangos
- 3 large tomatoes
- 1 – 1.5 onion
- 1 bunch cilantro
- 1-3 jalapeno’s
- brown sugar
- olive oil
- lime juice (lots)
Preparation
Step 1
1. chop the tomatoes, mangoes, and onion(s). Mix in large bowl
2. finely chop cilantro leaves, sprinkle
3. slice and seed jalapenos
4. combine jalapenos, a couple of tablespoons of olive oil, a couple of teaspoons of brown sugar in a blender.
5. scoop some mango/tomato/onion mixture into the blender. Blend finely and pour over tomato ma ngo onion mix.
6. let sit in fridge
** if you need the recipe to be ready quickly, skip the olive oil. It improves texture but takes a while (+/- an hour) to soak up the other flavors. It can be a bit overbearing if the salsa hasn’t had time in the fridge to blend
